Oven Fries

2 - 2 ½ pounds russet potatoes, cleaned, not peeled

EVOO

Coarse salt and fresh pepper

 

Cut potatoes into very thin slices and soak in cold water for 1 hour.  Pat potatoes dry.

In a clean dry bowl mix potatoes with just a small amount of EVOO and then salt and pepper.  Spray a baking sheet and spread potatoes in a single layer and bake in a 450-degree oven for 40 – 50 minutes; turning once after 25 minutes. Serve immediately.
