Potato-Cheddar-Chive Casserole

 1 ½ - 2 pounds russet potatoes, cooked until almost tender

4 tablespoons butter, melted

1 cup sour cream

1 ½ cups Cabot Cheddar Cheese, grated

¼ cup fresh chives, minced

Fresh pepper & salt

 

Preheat oven to 350 degrees.  Using a box grater, grate the potatoes.  Then mix potatoes with all the other ingredients and bake in a buttered or sprayed casserole dish for 40 minutes.
