Artichoke Leek Tart

 1 tart crust baked for 8-10 minutes

 Filling

1 tablespoon extra-virgin olive oil

1 small onion, sliced very thinly or chopped

1 leek, sliced or chopped (use only the soft green part)

1 clove garlic- minced

1 can artichoke hearts, chopped

1 ½ cups Swiss cheese, grated

½ cup Parmesan cheese

Dash cayenne pepper and white pepper

Dash lemon pepper

¼ - ½ cup half and half

2 eggs, beaten

Dash salt

 

In a skillet heat olive oil, onion, and leeks and sauté until onion are tender.  Add garlic and sauté for 1 minute more.  Transfer the onion mixture to a bowl and stir in all other ingredients mixing well.  Fill the baked tart crust and bake the tart for 20 – 25 minutes or until the tart is set.  Cool for 10 minutes and then serve.

 Serves 4-8

 **Also great served with a mixed green salad for a luncheon.
