Pasta Dish for Grand



1 tablespoon EVOO, (extra virgin olive oil)
1 large onion, chopped
2 cloves garlic, minced
2 chicken breasts, cooked & chopped
½ box mini penne or pasta of choice, cooked and drained
1 ½ tablespoons butter
1 ½  tablespoons flour
1 – 12 ounce can evaporated milk
12 ounces chicken broth, more if sauce is too thick
½ bag baby spinach, chopped – you can use more if desired
2 tablespoons sun dried tomatoes packed in oil, chopped
2 tablespoons fresh basil, chopped
Dash cayenne
Dash white pepper
¼ cup Parmesan cheese, for sauce

¼ cup Parmesan cheese, to serve with the pasta

Cook pasta and set it aside.  Cook chicken, then dice chicken and set aside.    In large saucepan over medium heat, heat the olive oil and then add the onions; sauté onions until they are soft and clear.  Add garlic and cook for 2 minutes more.  Next add butter, as soon as butter has melted add flour and stirring cook for 2 minutes.  Next add evaporated milk and chicken broth, stirring often cook sauce for 8 – 10.  Now add in spinach, chicken, basil, sun dried tomatoes, peppers, and mix well.  Lastly, add in the pasta and the ¼ cup Parmesan cheese.  Simmer for about 5 minutes and then serve with a dish of Parmesan cheese.
