½ cup butter, melted
2
tablespoons refined coconut oil
1
cups sugar
1/3
cup brown sugar
⅔ cup unsweetened cocoa powder
2
large eggs at room temperature
3
teaspoons vanilla extract
1
tablespoon espresso powder
½ teaspoon salt
½ cup all-purpose flour, a little heavy
1
cup semi-sweet chocolate chips
1 - 1 1/2 cup chopped walnuts
Preheat
oven to 350 degrees. Butter a brownie pan or a 9x9” baking dish. Combine melted
butter, espresso powder, coconut oil, cocoa powder, and both sugars in a large bowl.
Stir until smooth. Mix in the eggs, vanilla, and salt. Stir in the flour
(batter should be thick) and gently fold in the chocolate chips, do not over-mix! Spread the batter into the prepared pan and bake for 21-25 minutes or
until they become glossy around the edges and a toothpick comes out clean when
inserted 1 inch from the edge. Let cool slightly before cutting.
