4 chicken breasts- boneless, skinless

½ cups Ritz cracker crumbs
½
cup freshly grated parmesan cheese
¼
cup parsley, chopped (optional)
½
teaspoon garlic powder
½
teaspoon dried basil (optional)
dash
red pepper
black
pepper to taste
½
cup butter, melted or use a mixture of half butter and half light olive oil
Place
melted butter in a pie plate and then in a second pie plate mix everything else
together. Dip chicken breasts into
butter and then into the Ritz cracker mixture.
Place breasts on a greased baking sheet or a baking sheet lined with
non-stick foil. Bake @ 375 for 45
minutes.
