Balsamic Roasted Chicken


1 whole chicken cut-up or 4 chicken breasts

 Mix marinade in a blender:

1 tablespoon fresh chopped rosemary

1 clove garlic, minced

¼ teaspoon salt

2 tablespoons olive oil

Balsamic vinegar

black pepper

 

Topping:

4 tablespoons artisan-made balsamic vinegar

½ teaspoon brown sugar

 

I remove the skin from the chicken, this is optional and marinate it overnight or for several hours.  In a 350-degree oven bake chicken “skin” side down for 30 minutes.  Turn the chicken over and bake for 20 minutes more.  Then turn the oven to 450 and brown chicken for 5-10 minutes.  Serve with 4 tablespoons artisan-made balsamic vinegar and ½ teaspoon brown sugar poured over the chicken.
