package of smoked sausage- hot, turkey, or beef

teaspoon each of thyme, cayenne pepper, black pepper, and sage

small can of tomato paste

– 14-ounce cans of Petite diced tomatoes

In
a small skillet make a roux with the butter and flour. In a large pan heat the olive oil and then add
onion, celery, and red peppers and sauté until almost tender. Add garlic, sausage, bacon, and seasonings, and cook for 2 minutes. Add the roux and all
other ingredients into the pan stirring well.
Simmer until rice is cooked; about 30 minutes and serve.
