leeks, cleaned well and soft part only chopped

shallots, minced

cloves garlic, minced

large tomatoes, peeled and chopped

cup white wine

cup cream

tablespoons lemon juice
salt
and pepper

pounds fish

tablespoons parsley, chopped
In
the butter over low heat cook until soft the leeks and the shallots, add the
garlic, tomatoes, and cook until almost all liquid is gone. Now add the cream, lemon juice, salt, and
pepper and simmer for 10 minutes. (This
part can be made ahead and keep in frig until ready to use) Place fish in pan
or baking dish and season with salt,
pepper, and paprika. Bake in a 350-degree
oven for 10 - 15 minutes or until done, and serve with the sauce spooned on top
of the fish.
