1 1/2 cups coconut
1 cup flour
1/2 cup sugar
1 stick butter, cold, cut into cubes
Preheat the oven to 350 degrees. Butter an 8" square glass baking dish and set it aside. In a bowl mix coconut, flour, and sugar together. Then add cold butter cubes and using a pastry blender cut into the mixture until it resembles coarse corn meal. Press mixture into the bottom of your prepared baking dish. Bake crust for 15 minutes.
3 eggs, room temperature
1 cup sugar
1/3 cup fresh squeezed lemon juice
1 heaping tablespoon of lemon zest
1 tablespoon flour
1/8 teaspoon salt
While the crust is baking in a bowl beat eggs until they lighten up, add all other ingredients, and beat well. Pour into the baking dish when the crust is done and bake the bars for 25 minutes. When they have cooled a little sift powder sugar over the top. Cut into squares and enjoy!
