T's Fritata





8-12 eggs
3 tablespoons cream or milk
1cup grated cheddar cheese
1/2 cup grated Parmesan cheese 
1/4 teaspoon salt 
Cayenne to taste 
Pinch nutmeg 
2 cups fresh chopped spinach, sauteed just for 1 minute 

Topping:
1/2 cup cheddar cheese 
1/4 cup Parmesan
Paprika

In a bowl whisk eggs with the cream and salt; stir in all other ingredients. Preheat oven to 350 degrees. Butter a 10" cast iron skillet or a 10" glass pie pan and pour egg mixture in the pan. Sprinkle the cheeses over the top, then sprinkle some paprika over the top. Bake for 20 - 25 minutes. Cut and serve.  These are also great done in a buttered or sprayed muffin tin; freeze the mini frittata's in a large Zip-Lock and use as needed!  We make these to take when traveling and heat them up in the hotel's microwave for breakfast!   

Some other ingredient ideas:
Cooked onion, roasted red peppers or mushrooms, arugula, and goat cheese. Anything you might like in an omelet would work!
