Summer Squash Gratin a la T


Topping:
¾ cup panko breadcrumbs
¼ cup grated parmesan cheese
2 tablespoons melted butter
Mix together and set aside.

1 ½ pounds summer squash
1 medium onion, chopped finely
1tablespoon EVOO

2 tablespoons white wine or vermouth
½ cup sour cream
¼ cup grated Swiss cheese
¼ cup grated parmesan cheese
1/8 teaspoon lemon pepper
1/8 teaspoon tarragon
black pepper
heavy dash cayenne pepper


Preheat oven to 350 degrees.  Sauté onion in EVOO just until tender. Add the squash and cook for one minute just to soften.  Spoon squash mixture into a large bowl and add in all other ingredients gently mixing well.  Spoon into a buttered baking dish, sprinkle on topping and bake for about 35 minutes or until top is browned and bubbling.
