Everyday Vinaigrette Dressing a la Teri



Basic ingredients:
¼ cup white wine vinegar or fresh lemon juice
2 tablespoons Dijon mustard
black pepper
pinch of salt
¾ cup extra virgin olive oil or light olive oil

Whisk vinegar, mustard, and black pepper together.  Slowly whisk in the olive oil. 

This dressing keeps for several weeks in the refrigerator.

Extras:
Fresh or dried basil
¼ cup fresh grated Parmesan cheese
Pinch thyme
Or

Fresh tarragon
