Lemon Sugar Cookies

1 cup butter
¾ cup sugar
1 egg
1 egg yolk
1 tablespoon lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla
½ teaspoon salt
2 ½ cups flour, sifted

Preheat oven to 350 degrees.
Cream butter and sugar together until light and fluffy.  Add in eggs, lemon zest, lemon juice, vanilla, and salt, beat just to combine.  Add flour and mix again just until all combined.  Chill dough for about 30 minutes and then using a small 1” cookie or ice cream type scoop, scoop out the dough, cover dough ball with sugar, flatten just a little with your fingers and bake on parchment lined cookie sheets for 10 -12 minutes.  Edges will just start to brown.  Cool on wire racks and store in airtight containers.  These cookies freeze well.
