Teri's Old Fashioned Lemon Bread



Makes 1 loaf

Bread Ingredients
1½ cups flour
1 cup sugar
1 teaspoon baking powder
½ teaspoon salt
2 eggs
½ cup milk
¼ cup canola oil
¼ cup butter, melted
1 lemon,  grated

Glaze
4 ½ tablespoons fresh lemon juice
1/3 cup sugar

Mix all dry ingredients together and set aside.  Lightly beat eggs, then beat in milk, oil, butter, and lemon peel.  Add liquid to the flour and stir until just blended.  Pour into greased and floured loaf pan (9X5).  Bake in preheated 350 degree oven (325 for glass pan) for 40 – 45 minutes, or until wooden toothpick pick comes out clean.

For glaze combine ingredients in small pan.  Place over medium heat and cook, stirring, until sugar dissolves.

When bread is finished baking, using a long skewer, poke numerous holes all the way to the bottom of the loaf.  Drizzle hot glaze over top so that is slowly soaks into the bread.  Let bread cool in pan for 15 minutes and take bread out, place it on a rack to cool completely.
