Shrimp Puffs

Shrimp Puffs

Pastry
4 ounces butter
1 cup water
1 cup flour
¼ teaspoon salt
4 eggs

Pre-heat oven to 375 degrees.
Boil water, butter, and salt together.  Add flour all at once and mix until it forms a ball.  Remove from heat and by hand beat in eggs one at a time until dough is shiny.  Use a small 1" ice cream scoop or drop a rounded teaspoonful of dough onto a baking sheet and bake for 25 minutes or until lightly browned. Place on cooling rack.

Filling
2 ½ cups cooked small shrimp, minced
½ cup green onions, minced
½ cup water chestnuts, minced
½ cup mayonnaise
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
4 teaspoons lemon juice
½ teaspoon basil
dash salt
½ teaspoon pepper


Mix together all filling ingredients.  Split cooled pastry puffs in half, fill with shrimp mixture and serve.
