Roasted Cauliflower

 ½ medium cauliflower, leaves removed

About 2 tablespoons olive oil

Kosher salt and freshly ground black pepper

 

Preheat oven to 450 degrees.

 

Cut cauliflower into wedges and rub with oil and then the salt and pepper.  Place cauliflower on a baking sheet and roast for about 20 minutes.

 

* For a change sprinkle veggie with a bit of Parmesan cheese just before you serve it!
