1-pound black-eyed peas, rinsed and soaked overnight
1 tablespoon olive oil or canola oil
1 – 2 cups
diced ham of choice
4 slices
bacon, diced
1 large onion,
diced
1 cloves
garlic, minced
4 cups water,
approx.
Dash red
pepper flakes
Dash black
pepper
¼ teaspoon
mace
Salt to taste
Sauté ham,
onions, and garlic just until tender. Add peas, water, and all spices
and cook until tender.
