1 tablespoon EVOO or canola oil
1 large, sweet onion, diced
2-3 cloves garlic, minced or grated
1 pound ground chicken
½ pound ground pork (or you can use 1 pound pork
& ½ pound chicken)
1 can petite diced tomatoes
1 small can of tomato sauce
2 tablespoons tomato paste
1 can of pinto beans
2 cans of red kidney beans
1 small jar of diced pimento (If you prefer you can
use ½ of a red pepper. You will need to dice it and cook it with the onions)
1 teaspoon
paprika
2 -3 teaspoons chili powder
1 teaspoon ground cumin
½ teaspoon black pepper
¼ teaspoon ancho chili powder
¼ teaspoon chipotle
Cayenne to taste
1 teaspoon Worcestershire sauce
In a large pot heat the oil and then add the onions,
cooking until onions are just getting tender. Add the garlic and cook for 1
minute more. Then add the ground chicken
and pork and cook for 8 minutes or until meats are cooked through. Now add all other ingredients and let the
chili simmer for at least 2 hours. Check
for seasonings after 1 hour to see if you want more chili powder or any other
seasonings. Serve the chili with a
tablespoon of sour cream in the middle if desired.
