- 2 cups white granulated sugar
- 4 cups all-purpose flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2 eggs
- 2 cups milk
- 1/3 cup refined coconut oil
- 1/3 cup melted butter
TOPPING:
- 1 heavy tablespoon of cinnamon
- ⅔ cup white granulated sugar
- Preheat oven to 350°F and grease loaf pans. Mix sugar, flour, baking powder, and salt in a medium mixing bowl. Set it aside. In a large mixing bowl or mixer, beat eggs, milk, butter, and coconut oil. Gradually add the dry mixture to the wet until just moist. Pour mixture into loaf pans 2/3 full to compensate for the rise. Combine topping, spoon on each loaf and swirl in with a knife, leaving some on top.
- Bake for 40 minutes for 6 miniature loaf pans or until a toothpick inserted into the center of the loaf comes out clean. Or for large loaf pans bake 50 minutes or until done.
