T's Summer 2022 Cocktail

6 strawberries 

1/2 ounce simple syrup *

3/4 ounce fresh lime juice

2 ounces Gin

Club soda, 1-2 ounces, not so much!

Put strawberries and simple syrup in your shaker and muddle well. Then add lime juice, Gin, and a few ice cubes. Shake for at least 10 seconds, and strain (or not**) into a tall highball glass that is half filled with ice. Top off with club soda and enjoy!

You can garnish this with a strawberry or a mint leaf.

Simple Syrup

1/2 cup sugar (or 1/4)

1/4 water

Mix the sugar and water together in a small pan and bring to a rolling boil. Let cool a little and then pour syrup into  bottle or jar. If you use the 1/4 to 1/4 ratio you must keep this in the refrigerator, the 1/2 sugar to 1/4 water ratio you can store in your bar area! I have started doing the 1/2 sugar recipe.

I do not like the strawberry seeds in my drink so I strain, if you don't mind the seeds, then add only fill the glass with just a couple of ice cubes, you can add more later if needed.
