Buttermilk Biscuits


 ½ cup cold butter

2 ¼ cups White Lily self-rising soft wheat flour

1 ¼ cups buttermilk

 

2 tablespoons melted butter

 

Combine butter and flour until course meal and cover and chill for 10 minutes.  Add all cold buttermilk and stir just until moistened.  Turn out and knead 3-4 times adding flour if needed.  Pat out to ¾ inch thick and fold over several times and then pat out to ¾ inch high and cut into biscuits.  Place on a lightly greased pan –with sides touching and bake in a 450 degree oven13-15 minutes or until lightly browned.  Top with melted butter and serve.

 

  • Bacon-Pepper Biscuits—add 1/3 cups crumbled bacon and 1 teaspoon black pepper.
  • Feta-Oregano- 4 ounces feta and ½ teaspoon dried oregano.
