Baby Spinach and Arugula Salad with Grilled Chicken, Grapes, Goat Cheese, and Walnuts

 

Salad:

2 cups chopped grilled chicken breast, I made a marinated the chicken with Dijon mustard, honey, salt, pepper, olive oil and some vinegar for a couple hours before grilling the chicken.

1 bag baby arugula

1 bag baby spinach 

¾ cup seedless red grapes halved

cup crumbled goat cheese

¼ cup pine nuts or walnuts, toasted

Toss all together.

 

Dressing:

2 tablespoons honey

1 tablespoon Dijon mustard

1/2 teaspoon fine sea salt

1/2 teaspoon freshly crushed black pepper finely ground

1 large garlic clove grated

1/4 cup balsamic vinegar

½ - 3/4 cup extra virgin olive oil

Whisk together the first 6 ingredients, then slowly whisk in the olive oil. This is better if it is made a day ahead if possible!
