16-ounce package fresh mozzarella slices

cup pimiento-stuffed olives
1cup
pitted Greek olives
1/4
cup balsamic vinegar
1/4
cup olive oil
1
tablespoon minced fresh parsley
1
tablespoon minced fresh basil or 1 teaspoon dried basil
2
garlic cloves, grated
1
jar (2 ounces) pimiento strips, drained and chopped

French bread baguette slices
Directions
In
a small bowl, whisk vinegar, oil, parsley, basil, and garlic until blended; add
in the olives and pimento slices. Mix together, cover and chill overnight. To
serve, arrange the cheese slices in a circle on the outside edge of your serving
plate. Place the olive mixture in the center. Serve with baguette slices.
For
more variety, fold thin slices of Italian meats such as soppressata, pepperoni,
prosciutto and salami in half and tuck them between the cheese slices.
