T's Grilled Shrimp Taco's


2-3 teaspoons chili powder
1 teaspoon sugar
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/4 teaspoon lemon pepper
1/4 teaspoon black pepper
1 jar whole roasted red pepper or 1 fresh red pepper, seeded and in in half
1 sweet onion cut into thick rounds or 6 scallions
2 tablespoons olive oil
1-pound peeled shrimp, medium in size, put on metal skewers and brushed with olive oil

6-8 10" flour tortillas
2-3 cups shredded romaine or iceberg
1 cup sour cream
1 avocado mashed and sprinkled with lime juice
1 lime cut into wedges
2 cups grated pepper jack cheese 


Mix all seasoning together in a small bowl and set aside.  Brush olive oil on all the veggies.  I used whole jarred roasted red peppers. Sprinkle about half of the seasoning mix over the veggies and place them on the grill.  Then sprinkle the other half of the seasoning mix over the shrimp and place them on the grill.  At the last minute grilled the tortillas shells just to warm and place them on a plate and cover with foil. When shrimp are cooked remove them from the skewers and chopped them in half or thirds and place in a bowl.  Place all veggies on a platter.   Serve tacos with your sides of lettuce, mashed avocado sour cream, cheese and lime wedges.
