Roasted Olives



1 Castelvetiano Olives
2 oranges, jest from 1 & juice from 2
3 tablespoons olive oil
3 sprigs Rosemary use 1 for garnish
2 sprigs Thyme
3 cloves garlic sliced thinly
Dash red pepper flakes
¼ teaspoon ground fennel seeds

Preheat oven 400 degrees.  Mix all ingredients together and pour into a 9 X 13 baking dish.  Bake for 30 minutes, stirring every 10 minutes.  Serve warm with a sprinkling of orange jest and a sprig of Rosemary.
