Ingredients:
1 cup plus 1 tablespoon oatmeal
¼ cup all Bran cereal, not Bran Flakes or ¼ cup oatmeal
½ cup coconut
1 1/4 cup milk
1 egg
1 yolk
1/2 cup vegetable oil
1/2 cup brown sugar
1 cup chocolate chips semi sweet
1 1/4 cups whole wheat flour
4 tsp baking powder
½ teaspoon baking soda
1 tsp salt
Cinnamon and sugar, optional
Instructions:
Preheat oven to 400.
Grease a muffin tin or line with cupcake liners and set
aside.
In a large bowl combine the oats, cereal and milk and set
aside.
Stir the egg, oil, 1/2 cup of the brown sugar, and
chocolate chips into the oat and egg mixture.
In another bowl combine flour, baking powder, baking soda,
and salt together. Stir flour mixture and coconut into the oat mixture
just until moist.
Fill muffin tins or liners 2/3 full with batter.
Sprinkle tops with a little cinnamon and sugar if desired. Bake for
approximately 20 minutes.
**I think chopped walnuts, pecans, or almonds would also
be very good in this muffin!
