T’s Roasted Onion Dip



1 large sweet onion- peeled and quartered
½ cup chopped sweet onions
Pinch coarse sea salt
2 tablespoons extra virgin olive oil
1 ½ cups sour cream
¾ cup mayonnaise
¼ teaspoon white pepper
¼ teaspoon garlic powder


Place quartered onion in the center of a large piece of foil.  Drizzle with the olive oil and season with the salt.  Twist the foil closed and roast onion in a 400 degree oven for 30 to 40 minutes.  Meanwhile place chopped onions in a skillet with a little olive oil and salt and slowly cook until nice and brown but do not burn.  Dice cooked onions and put into small bowl, add the sour cream, mayonnaise, and spices.  Then mix well. Chill for several hours and serve with Potato Chips, Fritos, or sliced vegetables.  This is also great on potato chips that have been heated under the broiler and lightly browned!
