T's Pumpkin Bread #2





2 ½ cups sugar
½ cup brown sugar
3 eggs, large
1/3 cup softened butter
1/3 cup coconut oil
1 teaspoon vanilla
1 16 ounce can pumpkin
3 cups flour
½ teaspoon salt
½ teaspoon baking powder
1 teaspoon baking soda
1 teaspoon each cloves, cinnamon, allspice, ginger, and nutmeg
½ teaspoon fresh grated nutmeg, optional
1 cup chopped pecans or walnuts

Mix all dry and set aside.  In large bowl beat together butter, coconut oil, sugar, eggs, pumpkin, and vanilla.  Then stir in the dry ingredients and nuts.  Divide between to greased and floured loaf pans.  Bake in a 350 degree oven for 65 -75 minutes or until done. 

Makes 2 loaves
