New Year’s Black Eyed Peas




1 pound black eyed peas, rinsed and soaked overnight
1 tablespoon lite olive oil or canola oil
1 – 2 cups diced ham of choice
4 slices bacon, diced
1 large onion, diced
1 cloves garlic, minced
4 cups water, approx.
Dash red pepper flakes
Dash black pepper
¼ teaspoon mace
Salt to taste


Sauté ham, onions, garlic just until tender.   Add peas, water and all spices and cook until tender.
