Coconut Macaroons

1- 2/3 cup unsweetened coconut
1/3 cup sugar
2 large eggs- to equal ½ cup- no more no less
1 tablespoon butter- melted

Mix coconut with sugar and mix well.  Beat eggs well, then mix eggs & butter into the coconut/sugar mixture.  Grease a cookie sheet and place 20 rounds onto cookie sheet leaving a space between each macaroon.  Bake in a 350 degree oven for 20 minutes or until lightly golden brown on top.  Gently remove baked macaroons to a rack to cool. 

** Do not try to double this recipe!**

For an extra twist:
Dip or drizzle cooled macaroons into melted semi or bittersweet chocolate.
