White Bean Soup


 

2-3  tablespoons Cold Pressed EVOO

1 large onion, diced

3 -4 celery ribs, diced

3 carrots, diced

2 cloves garlic, minced

4 sliced deli ham, chopped

1 slice cooked bacon, chopped

1 carton Trader Joes Low Sodium Chicken Broth

4 sprigs thyme

2-3 sprigs fresh rosemary

1 can PETIT diced tomatoes

1/4 to 1/2 teaspoon lemon pepper

fresh ground pepper

3-4 cans great northern beans, drained

 

Directions:

 

Heat EVOO in large pan and add onion and celery sauté  for 5 minutes. Now add, carrots, ham, and bacon continuing to sauté for another 5-8 minutes.  Add garlic and cook for one more minute.  Next add all other ingredients but the beans and bring to a boil and then turn heat down and simmer for an hour.  Then add the beans and taste the broth, adjust spices if needed.
