T's Pumpkin Bread

2 ½ cups sugar
½ cup brown sugar
3 eggs, large
1/2 cup coconut oil
1/2 melted butter, or all butter
1 teaspoon vanilla
1 16 ounce can pumpkin
3 cups flour
½ teaspoon salt
½ teaspoon baking powder
1 teaspoon baking soda
1 teaspoon each cloves, cinnamon, allspice, ginger, and nutmeg
½ teaspoon fresh grated nutmeg, optional
1 cup chopped and toasted pecans or walnuts


Mix all dry and set aside.  In large bowl beat together sugar, eggs, pumpkin, and vanilla.  Then stir in the dry ingredients and nuts.  Divide between to greased and floured loaf pans.  Bake in a 350 degree oven for 65 -75 minutes or until done.  

** Also good with 1 cup of mini or regular chocolate chips!
