Joan’s Amaretti Cookies




8 ounces canned almond paste
1 cup superfine sugar *
2 large egg whites

Sugar for dusting cookies

In food processor mix sugar and almond paste pulsing until mixture is fine.  Add egg whites in three batches, processing well after each addition and pulse until very smooth.  Using a 1 inch “ice cream” type scoop drop scoops of batter about 1 inch apart on a parchment lined cookie sheet.  Sprinkle tops of cookies with sugar and bake in a 375 degree oven for 15 mintues.  Let cookies cool a little and then remove them to cool completely on a rack.  Store in an airtight container. these cookies freeze very well.


·         To make super fine sugar, mix sugar in food processor for about 30 seconds.
